Please help with my jeep Cherokee classic!?

I have a 98 jeep Cherokee classic 4.0 that is acting up. When you begin to drive and pull out on the road it bogs down and kicks for 10-20 seconds then it runs fine. Also my gauges in the jeep don't act properly. Thermostat is all over the place and gas gauge isn't working well. The check engine light is on with code 0117 coolant temp sensor. I've replaced it twice. I've put a new cat/muffler, Changed out map sensor tps iac cleaned and still have this issue. Please help!
